The BEST Vegan Gluten-Free Lemon Bar

A vegan and gluten-free version of lemon bars that is remarkably similar to the original

These bars feature a very lemony, wonderfully set curd atop an irresistibly buttery shortbread crust. They're kind of epic. Let's start zesting!

We have made lemon bars previously, but with a naturally sweetened, creamy filling. 

This time is different. This NEW version is vegan and gluten-free, but it's still classic enough to trick lemon bar connoisseurs.

It starts with a shortbread-style crust created by combining cane sugar and vegan butter, which lends lift and fluffiness to the pastry.

With just two more ingredients (gluten-free flour blend and salt), the dough is ready to press onto a pan.

Then it's time to fill! It has a strong lemon flavor, with plenty of lemon juice and zest! Cane sugar balances the tartness and keeps the flavor consistent, 

 while homemade cashew milk is the dairy-free milk of choice since it is rich and creamy, preventing the bars from becoming rubbery.

Cornstarch and turmeric come to the eggless rescue! Cornstarch solidifies the filling in the same way that egg does in conventional curd, and a minuscule bit of turmeric adds a brilliant yellow color.

The final filling ingredients include salt for flavor and vegan butter for creaminess and a slight "give" that prevents gumminess.
